Ghirardelli's Chocolate is a tasty product of San Francisco and it’s the oldest continuously running chocolate factory in all of the United States. It started out in the 1850s right across the street here in what today is 415 to 431 Jackson Street. As for Mr. Ghirardelli, an Italian immigrant, he started his first chocolate factory where they churned out bars of chocolate for 40 years until the new generation of chocolatiers took over and moved it to new premises near Fisherman's Wharf where today it’s known as Ghirardelli Square. [music] So it was inside this building here that Ghirardelli created a special technique called the Broma process. This was actually quite an accident because one day there was an employee hanging up a sack of cocoa mass as if he roasted cocoa beans. It was a warm day so the cocoa butter melted and separated out and dripped out all on to the floor making quite a mess no doubt. But the good news was that inside the sack was left the concentrated good stuff. It was this concentrated good stuff which gives Ghirardelli'’s it’s special flavor.
